Sweet Potato & Turkey Meatloaf
This a great choice for work week breakfasts. Cook a batch at the start of the week to make sure you have a nutritious and filling breakfast option that you just need to heat and eat! Buckwheat has been shown to lower inflammation and unhealthy cholesterol levels while, whilst increasing the "good" cholesterol, preventing forms of heart disease.
INGREDIENTS

500g Turkey mince

1 large sweet potato, peeled & roasted

1 golden shallot- finely chopped

1 egg- room temperature

1/2 cup buckwheat flour

1 teaspoon sea salt

2 tbsp dried mixed herbs
OR
1 tbsp tumeric & 1 tbsp smoked paprika

METHOD

Peel and roast sweet potato for 20 mins in 160C oven (optional to drizzle with coconut oil while roasting to prevent drying)

Once potato has roasted, turn oven up to 180 to preheat for loaf

Blitz sweet potato in a food processor until in small 1cm approx pieces (not until puree)

Add all ingredients into mixing bowl and combine (best with your hands)

Place into well greased tin and cook for 50-55 mins on 180C
