Sweet Potato Rosti
Sweet potatoes are high in anti-inflammatory benefits, including about half of the daily recommended intake of vitamin C per sweet potato. They also contain Vitamins A and E which also support a healthy immune system and are powerful disease-fighting antioxidants

When cooking at high heats, it's always best to use coconut oil as olive oil oxidises which can cause inflammation in your body
INGREDIENTS- (One Serving)

1 cup grated Sweet Potato

1 tsp chopped spring onion

1 tsp grated Leek
-
Season with paprika, salt and pepper

Coconut oil
METHOD

Grate Sweet Potato and Leek

Combine in bowl with chopped spring onion and seasonings

Heat 1tbsp coconut oil in pan on a medium heat

When oil hot, transfer ingredients to pan and using a spoon squash into an oval shape, 1-2cm thick to ensure it cooks through

Cook on each side for 4-5 mins
