Sweet Potato Rosti

Sweet potatoes are high in anti-inflammatory benefits, including about half of the daily recommended intake of vitamin C per sweet potato. They also contain Vitamins A and E which also support a healthy immune system and are powerful disease-fighting antioxidants


  • When cooking at high heats, it's always best to use coconut oil as olive oil oxidises which can cause inflammation in your body

INGREDIENTS- (One Serving)

  • 1 cup grated Sweet Potato 

  • 1 tsp chopped spring onion 

  • 1 tsp grated Leek

  • Season with paprika, salt and pepper

  • Coconut oil 


  1. Grate Sweet Potato and Leek

  2. Combine in bowl with chopped spring onion and seasonings 

  3. Heat 1tbsp coconut oil in pan on a medium heat

  4. When oil hot, transfer ingredients to pan and using a spoon squash into an oval shape, 1-2cm thick to ensure it cooks through

  5. Cook on each side for 4-5 mins
