Paleo Hollandaise

This perfect sunday breakfast companion will knock your socks off!
Buying jarred hollandaise means buying a sauce full of preservative and not knowing where the eggs and butter were sources from. The old saying"you are what you eat" goes for our animal friends as well, the healthier the animal lives, the healthier it will be to consume. When sourcing butter its always best to buy grass-fed which contains an anti-inflammatory fatty acid called Butyrate and Vitamin K2, important for artery health. Free-range eggs also have a higher vitamin content.

INGREDIENTS

  • 3 free-range egg yolks

  •  6 tbsp softened grass-fed butter

  • 1 tbsp lemon juice

  • Sea salt and white pepper for seasoning

METHOD

  1. Place a heatproof bowl over a pan of simmering water without letting the bowl touch the water

  2. Add the egg yolks into the bowl and whisk until pale

  3. Add in softened butter one tablespoon at a time, whisking continually until the mixture has thickened

  4. Stir in lemon juice, salt and pepper and serve immediately
