Paleo Carrot Walnut Muffins
Carrot cake without the guilt. Carrots contain powerful antioxidants called Carotenoids which help to modulate immune function, as well as Vitamin A which is well known for its role in healthy visual function.
INGREDIENTS

3 grated carrots

5 eggs room temperature

1/2 cup walnut flour (blended walnuts)

1/2 cup coconut flour

1/4 cup coconut oil
-
2 tbsp honey (or organic maple)

1/4 cup almond milk
-
1 tsp vanilla bean paste

1 tsp baking soda
-
2 tsp cinnamon
-
1/2 tsp nutmeg

pinch salt
METHOD

Pre-heat oven to 180C

Place all dry ingredients into mixing bowl and stir together

Melt coconut oil and add to mixture
-
Mix wet ingredients in seperate bowl and then add to dry ingredients. Mix until all ingredients combined.

Add to greased muffin tin and bake for 25-30 mins
