Paleo Carrot Walnut Muffins

Carrot cake without the guilt. Carrots contain powerful antioxidants called Carotenoids which help to modulate immune function, as well as Vitamin A which is well known for its role in healthy visual function.

INGREDIENTS

  • 3 grated carrots

  • 5 eggs room temperature

  • 1/2 cup walnut flour (blended walnuts)

  • 1/2 cup coconut flour

  • 1/4 cup coconut oil

  • 2 tbsp honey (or organic maple)

  • 1/4 cup almond milk

  • 1 tsp vanilla bean paste

  • 1 tsp baking soda

  • 2 tsp cinnamon

  • 1/2 tsp nutmeg

  • pinch salt
     

METHOD

  1. Pre-heat oven to 180C

  2. Place all dry ingredients into mixing bowl and stir together

  3. Melt coconut oil and add to mixture

  4. Mix wet ingredients in seperate bowl and then add to dry ingredients. Mix until all ingredients combined.

  5. Add to greased muffin tin and bake for 25-30 mins
