Gut healing Berry Jellies

Gelatin is one of my favourite ingredients for healing the gastrointestinal tract. The gastrointestinal tract can become "leaky" causing illness, bloating and food sensitivities. Gelatin is a great source of amino acids such as glycine that strengthens the gut lining, reducing inflammation. 

 

NOTE: If you experience bloating and flatulence, it would be best to leave out the honey/maple as not to feed any "bad" bacteria in your gut.

INGREDIENTS

  • 1 cup fresh berries

  • 3/4 cup lemon juice

  • 4 tbsp Grass-fed gelatin

  • (optional) 1-2 tbsp honey or organic maple

METHOD

1. Blend together lemon juice and berries in food processor 
2. In a small saucepan, mix all ingredients together on low heat, whisking continuously for 5 mins
3. Put into silicone moulds or a silicone baking tray, refrigerate for 1 hour
4. Cut into cubes and serve

(Make sure you leave uneaten jellies in the fridge so they don't start to melt)
